Dinner Time!

Well I have been taking a siesta it seems. We have been so busy getting back into our routine with both of the boys now in school and the new schedules between soccer, Tae Kwan Do and cub scouts it has been a challenge. But here we are and I am going to try my hand tonight and link up to some parties (I have never done it before so bear with me.)

As I was saying we have a busy schedule and I need to ensure that we have time to have dinner together as a family. This is not always easy as I am a working mother who has an hour commute. So to help out I try and make a few meals ahead of time so that all we have to do is heat up the main course and make a vegetable or salad to go with it. So for my first link up I have decided to linkup what I made for dinner the next few nights.

I would not be able to do any of this if it wasn't for a great meal planning website that I use called E - Mealz. This site is terrific and for a low price of $1.25 a week they give you a full weeks meal list (including sides) the recipes and the best part I think is the shopping list. My Kids love the dinners and I love the convience. I take the menu every week after I have done the shopping and put it up ont he fridge so we all know what we are having that night and for the rest of the week. The shopping list is great and before I head off to the store I shop my fridge and pantry first and then add to my list anything else that is needed.


So here we go hear are the 2 meals I made tonight and again A BIG SHOUT OUT TO THE TEAM AT E -MEALZ PLEASE GO VISIT THERE WEBSITE!

Stuffed Zuchini

4 Zucchini squash, split lengthwise
(1t oil, 1 tsp mince galric, 1/2 tsp salt, 1/4 tsp pepper)
1 onion chopped
1 green pepper chopped
1/2 c of zuchini
1lb ground turkey
1/2 c shredded cheddar cheese
pine nuts or chopped walnuts

Preheat oven to 400 degrees

1. scoop out each zucchini and save this
2. chop you onion, green peppers and 1/2 cup zucchini (this is what you scooped out)
3. add your oil, garlic, onion, pepper and zucchini to a skillet and saute for 5 minutes
4. While the veggies are sauteing take your zucchini halves and place them in a microwave safe dish with a half a cup of water face down and cook on high for 4 minutes covered with platic wrap. (note that I do not have a big enough micorwave to do them all so I put them on a plate with water and covered them.) Once they are done put them in a baking dish and let them rest before filling them.
5. Add the turkey to the veggies and cook till its brown. Add salt and pepper
6. once cooked take off heat and add the cheese and then stuff each zucchini and sprinkle the top with nuts. Place in the oven for 10 minutes. 

These are my personal new favorite.
We also threw together this quiche.
